The Colorado-based health food eatery made its Memphis debut in fall 2020 and is getting ready to open its second area location early next month in the former Juice Bar space in Crosstown Concourse. Now, the company is currently looking for a site for its third area location, according to Memphis Business Journal. While it’s hard to say when this new location will open, it will equal the total number of sites the company has in its home state. The eatery offers a variety of healthy food and drink options.

“We’ve got a whole bunch of things that we’re hoping will come in the next 12 months,” founder Shannon Weston tells the Business Journal. “We have all these ideas and all these things we’ve been wanting to do and doing things that no one else is doing.”

While Weston launched the company in Colorado, her son Kyle played a significant role in bringing the concept to the Carolinas after attending Rhodes College and experiencing health problems at a young age. This led the company to open a location at 3139 Poplar Ave. The company is getting ready to open its second location in the area, which will be much smaller than the Poplar site and feature a more limited menu with the company’s top offerings plus grab-and-go items.

“Crosstown is such an amazing property,” Weston said. “Their mission is so in line with what our mission is. With Church Health there, and the amazing Lucy’s Bakery with its nonprofit mission to do something good for the world, it seemed like a really good fit culturally for us, which is super important.”
