Wild Beet Salad Company (formerly Lettuce Eat) is temporarily closing its Germantown location in search of a new nearby space.

On November 6, 2024, owner Kelcie Nollner posted a sign on the doors of the restaurant’s longstanding home at 6641 Poplar Ave that reads, “We will be *temporarily* closing at the end of December while we continue to look for a new location.”
The current eatery is located within Carrefour at Kirby Woods, a shopping center set to be redeveloped into the Standard Germantown project. This mixed-use development is slated for completion by 2030. Nollner was initially told she had until 2026 to relocate but learned just three weeks ago that she must find a new space sooner.
During the transition, Wild Beet will continue to operate as a catering service out of Memphis Kitchen Co-Op, a shared commercial kitchen in Cordova. There will also be a grab-and-go area.
Once a new location is secured, Nollner told What Now Memphis she expects the build-out to take 4-6 months. She hopes to find a space with an existing kitchen to expedite the process and plans to stay in the general area, focusing on locations that span around 2,000 square feet in East Memphis and Germantown.
Wild Beet’s menu includes a variety of customizable salads that can also be made into wraps, along with hot sandwiches and quesadillas.
“As I tape this on our front door I am just so overwhelmed with emotions,” said Nollner in a Facebook update announcing the news. “It has been the best 10.5 years and I am hopeful we will find a new home soon, and I will update everyone every step of the way.”
