At the helm of this bold expansion stands Flyway Brewing’s co-founder, Matt Foster, alongside Scott and Rebekah Tashie, the creative forces behind City Silo Table + Pantry. Together, with Foster’s experienced management team and the backing of City Silo’s parent company, Fresh Hospitality, they lead the charge. Notably, High Cotton’s president, Ross Avery, remains a key player with a stake in this collaboration.
The High Cotton space will undergo extensive renovations, all while honoring its esteemed legacy. Initially, patrons can anticipate a seamless transition, with cherished High Cotton classics like the Mexican Lager coexisting with select Flyway brews. As the venture unfolds, the spotlight will gradually shift to feature a curated selection of High Cotton’s finest alongside a dynamic lineup of innovative Flyway creations.
In addition to exceptional brews, Flyway will tantalize tastebuds with a diverse food menu as they venture into the former home of beloved brunch bistro Edge Alley. Drawing inspiration from their original location in North Little Rock’s Argenta Arts District, guests can expect signature dishes like Duck Confit Nachos, Buffalo Chicken Cheese Fries, and Mississippi Pot Roast Poutine, which have garnered praise even on national platforms like Diners, Drive-Ins, and Dives.
The reimagined High Cotton space will not only cater to discerning palates but will also serve as a vibrant hub for community engagement. The private back room will be transformed into a dynamic music and event space, shining a spotlight on local talent and fostering a spirited atmosphere. Furthermore, the new ownership is committed to preserving cherished traditions, such as High Cotton’s renowned Mug Club, offering patrons the opportunity to savor 20-ounce beers at the price of a pint through an exclusive yearly membership.
Anticipation is brewing for the debut of this innovative concept, with a grand opening celebration slated for the coming months. Stay tuned for further announcements on this exciting chapter in Memphis’ culinary and craft beer scene, and get ready for an unforgettable experience that seamlessly blends the best of High Cotton’s heritage with the bold creativity of Flyway Brewing.
